But is there a way to set individual permissions for ONE user?  I have a user who's editing/deleting their own posts and I would like to set just that one user to no be able to edit/delete their posts...

Yes,  I can create a special membergroup I see... but is there a way to do it without having to resort to that?

Create additional group and deny editing/deleting posts for this group.
