This might look odd. I really like SMF, but wondering for paid charter membership, can the copy right footer be removed?

No, As of now there isn't a way to remove the copyright footer.

The copyright must remain (even if your a Charter member).  There are no circumstances in which you are allowed to remove/change it. (as per the licence http://www.simplemachines.org/about/license.php )

What about removing the version number? I don't mind using the beta on a brand new site, but I sure hate having the word "beta" down there. It's an open invite for hackers.

The version number is allowed to be hidden. (but only if done a certain way, otherwise smf will identify that the copyright is missing).
