in cpanel, is there a specific way, a hierarchy ?

cPanel does have a backup manager, but personally I would get the database dump from phpmyadmin or SSH and then pull the forum directory from FTP.

how is that done?

You should be fine using the backup manager in cpanel.  Backup the home directory and the database.  If you need to revery back you can easily use the cpanel backup manager to restore it.
