Disabling the Forum part of SMF

Nope. It's designed to be a forum. If you don't want it to be a forum, you're trying to make it into something it wasn't intended to be.

Now I have thought of building a custom website on an SMF back end, just for fun and because I'm familiar with the coding, but it's really not the most sensible option. You can do it if you really want to though.

If you're not much of a coder, it might make more sense to decide exactly what functionality you require from your site, and then pick the app based on your requirements.

If you don't want the forum, then don't use a forum software... Use a cms, or blog, or gallery.
In other words, use the right tool for the site that you are building. Yes, you can do lots with SMF, including portals,galleries, blogs, etc... But the forum forms the BASE of the community site.

No, it's not the most bizarre request I've seen, therein lies the point. Why do you think SimpleDesk has a 'shut the forum down' mode? There are very legitimate cases for using SMF to bridge to things but they're specialised, and as stated, if you shut the forum down, what's left? In SD's case, the helpdesk is left (and that has intentions for things like bridging to other systems entirely, hence it makes some kind of sense, plus it's themable)
