I've tried to search around for this answer as I'm sure it must be here but can't find it.

How do I change the order in which posts show in a discussion?  Currently the latest post goes to the bottom of the discussion.  I would like the latest post to go to the top of the discussion. 

I'm hoping this is a simple change - other BBs I've used in the past always had it as a function in the admin board - but I can't find it for smf.

that is an individual setting per user...    you can set the default in themes and Layout > member options > (under default theme) Configure guest and new user options for this theme > Show most recent posts at the top.

you can also reset all of the existing users' settings.... however, they can set it to their choice in their own profile
