How To Not Remove Old Posts

In the admin settings Remove Old Posts, there is a default for 30 days. Right under that is the option to choose specific boards. If nothing is selected from the boards, is everything kept permanently?

You can select which boards to have replies deleted, in that area. If none are selected and you click on "Remove Now", all posts older than 30 days will be deleted.

So if I don't do anything with those settings and don't click "Remove Now", nothing gets deleted right?

Yes it's a totally manual process.  So if you do nothing, then nothing is done to your forum.  The 30 days is just the setting which is applied when you run the process and you can change this to anything you like.
