I practically just installed it today, so I'm uninstalling and then will reinstall. 
When I eventually do all that, will I be able to change the design as I like? And how come I have to verify each post?

You can easily use any one of the hundreds of templates around to customise, or you can make your own if you know how.
You do not have to verify each post. I would strongly suggest you verify each member by at least using email verification and enable the anti spam questions or you are liable to suddenly have thousands of spams on your forum. But once you have verified the members it is usually possible to allow them to post topics without needing approval

And I meant why do I have verify each of my posts that I'm writing in this thread?

You will have to download the themes/templates you want and then install them in your forum.
You can find some at http://custom.simplemachines.org/themes/ but there are others.
I am not exactly sure how this forum is set but I suspect you are having to verify because you are new and only have a few posts so far.
