Correct me if I'm wrong, but dont most, if not all the themes work no matter what version of SMF you're using.

Yes, many of the 1.0.3 themes will work fairly well for 1.1.  Some will not, because of the templates they change.  If you find a theme that does not, we or the author may be able to help you make it work with 1.1 Beta 1.
