which are the most important things to backup?

to avoid disaster?
do I backup the SQL databases (does that include members and posts)?
what is the exact procedure to backup a RC3 so in case something goes wrong it can be back up and running?
I have cpanel if that makes a difference.

The SMF database is most important. There is an option in cPanel to back up the database.

There is also a cPanel option to back up your entire root directory.

The Database, The Database, The Database. Oh, and /Attachments. ( Also avatars separately if you are using a custom avatar folder )
Those are usually everything you need, and can't get from simplemachines.org, to get your site back up and running again.

Of course, it's always wise to backup everything, database and files, since if you install any mods, themes or such - and then need to revert to a backup, you'd have to go through installing them all again, if you didn't keep file backups.

Under the section called Files, look for Backup
