Welcome message

In the header it says "Hello username" .......Where do I find this code, I have looked in all the obvious places and I am sure it is in Themes, but can't find it.
Hope somebody can tell me where to find this.

Your theme's index.template.php will contain it, but it will be referenced through an entry in $txt so it's translatable to other users.

OK, I just thought I had it solved.

How do I edit what it says?

Admin > Configuration > Languages > Edit Language > click on the name of your language > select 'General Strings' from the dropdown. Then find it in that page and edit it.
