Perhaps this is a newbie question, but is there a SMF Wiki or API that explains what variables one has to work with when writing mods? I'd like to write some mods, but I am not sure how to access the database through SMF, manipulate posts, etc.

No, because the variables are many, complicated and completely dependent on situation.
