we have SMF on a windows server and just updated to SMF 1.0.8.
But I had to open up the forum directory and make it full access for the web browser account.
I just would like to know what are the rights I should be setting on the directories to protect and make sure I am secure.

Attachments folder needs to be writable if you enable attachments on your forum.

All the other files just need to be readable. The only time you would need to be writable if you are going to install mods or update SMF.
