Am I missing something? My copyright still says 2006-2007. Why hasn't it updated to 2008?

Because a release hasn't occurred in 2008 yet.

For the record, British still states 2006 my itself.

.... and your site is only at 1.1.2  - I would suggest updating to the current stable release 1.1.4  Here (http://www.simplemachines.org/download/)
