Here is what I have now....

SMF
SMF 1.1.5
SMF to Joomla Bridge 1.1.7
Gallery2
Gallery version = 2.1.2 core 1.1.0.2
PHP version = 4.3.11 cgi
Webserver = Apache
Database = mysql 4.1.21-standard-log

Joomla, SMF and Gallery2 all use the same database.
So my question is, what do I have to do to separate SMF and Gallery2 from Joomla and the DB? I would like to run SMF and Gallery2 in separate databases and as separate programs and leave Joomla completely.
Because of the 'bridges' does Joomla hold any of the data I need to run SMF on it's own? Has anyone tried this before?
I am a DB NOOB, so keep your answers very simple.

Because bridge 1.1.7 changes NOTHING in SMF and Joomla, all you need to do is uninstall the bridge component, the bridge registration component, the bridge login module, and the SMF_header_include mambot.
After uninstalling those four things, you no longer have a bridge between Joomla and SMF. It does not change either software in any way, so you will be left exactly where you started before installing the bridge.

So I understand that Joomla's tables hold no data of SMF right?
After taking the steps that you mentioned, can I then take the combined SMF, Joomla and Gallery2 Database and simply delete all of the Joomla tables without lossing any of the SMF data?

Correct, SMF holds no Joomla data, Joomla holds no SMF data.
If you delete all of the Joomla tables, you will lose all of your Joomla data.
