I want to disable users being able to change their account names, email addresses and passwords, so I've clicked off on "dissallow to change account settings for own profile"... however, i DO want users to be able to hide their email addresses. any way to accomplish both of these tasks?
i don't think so, they an only hide their email addy if they can edit it, i suppose you could write a simple script to query the db to change that or have them pm you. lol :D

off the top of my head i don't think so, if not you can create a query to do that to everybody and add it to page that loads after someone registers. :-\
You could change the Register template to have the checkbox checked by default, and then run this query:
UPDATE smf_members
SET hideEmail = 1;
