I have installed this for a friend, their site is new, I've never used this software so i'm a little lost.
I want to change the header so that it doesn't say "simple machines forum" on the right hand side. Is it a requirement to have that there? if not how can I change it to say something else, I'm not sure if its textual or a graphic - I'd either like nothing there or a site specific graphic i.e one of my own.

I think its the site slogan you are talking about - add some text in there and it will replace the SMF logo.
The "simple machines forum" on the right is a logo image named smflogo.png contained in the main image folder, you can replace that by creating a new logo for your site and name it smflogo.png and uploading it to the images folder in the default curve theme on your site.
