I have two questions regarding the SMF copyright that is located at the bottom of the page:
1) Can I modify the copyright? (Ex: Change the text of the copyright to something say "Powered By SMF"?)
2) Can I remove the copyright?
I want to clear these up.

Don't you like free software and mods ? Don't you like supporting the people that has made and published this type of Forum and their mods? This isn't anything about if it is legal or not, It has everything about respect.
How can one little topic cause people wanting to delete credits and Copyrights. If I have a Mod that "Suki" or anyone else made wrote, they will be supported till the day my site closes.

Correct, but people need reminding from time to time, and it is also interesting to find out why people are enthusiastic about showing disrespect to the thousands of hours of their own free time that people have put in.
Funnier still is that probably less people want to do so now that they're actually allowed to (as SMF 1.1.x and SMF 2.0 RCs all did not permit it)

To what end, though?
As a general rule (note I am not part of the team), if it still represents the ownership of the SMF team and there is a link back to simplemachines.org, i.e. what you're indicating, it's *probably* OK.
I presume you're also wanting to remove the links to the credits page as well (which is also questionable)

If you rename or remove copyright/credits, then what is next ? Renaming the Copyrights or Credits of every Mod Creators also ? IMHO, that is a way to tick off many contributors of SMF and Mod Creators that put their creations on here for "FREE" also.

I'm looking to do something like I have in the attached screenshot. It still links back to Simple Machines and I'm keeping everything else the way it is. Its just that I'm using the 2011 theme from WordPress and am porting it over to my forum, and want to include a link to every software used to power my site in the footer.
@MC73: I don't actually care where a modification puts their copyright notice, and don't care what the said notice looks like.

Truthfully, I think it looks fine, but a team member would have to make the call.
@Colin, there is no need of reviewing this request by the team members; he is using 2.0.2 and the copyright already allows him to do what he asks for.
For SMF 2.x you Can remove the copyright but I wouldn't expect to get support from here if you do. For older versions of SMF 1.x and SMF 2.x RC you can NOT remove the copyright.

Of necessity never is a good idea. By choice and to be convinced, thats it. :)
