I'm looking to suggest a poll history that only admins can see which would give a list of the users that have voted, what they voted for and a date/time stamp of when they voted.

I would expect something like this as a core feature.
it would be a nice feature to see in a future version. i am not sure the need for a time stamp of when they voted but know who voted for what is useful.

If you need to see who votes what, the post in a thread - don't use a poll. Polls should be anonymous - always - IMO
