Can someone signpost me to how I can back up the SMF forum ina format that can then be transferred to BBPress? including all content and ideally the users?

You'll likely have better luck getting help at BBPress support than here. We don't really specialise in helping people who want to leave our software. BBPress's support is likely more familiar and experienced with import issues and can assist you with your request.
Also this board is for MyBB to SMF, not SMF to BBpress :P
