Is there any way to set up the admin to receive an email on any activity?

Best bet is to enable notifications (for youself) for each board you have

What I mean by any activity is any activity that doesn't come from the Administrator and guests.

Because I'm new to SMF I'm not sure if I'm missing activity I need to pay attention to.

You could use my approach or just use the 'Show unread posts since last visit.' link to see what's new whenever you visit the forum.
