I am about to begin set-up of a forum in an area with poor connectivity. Typically in these circumstances, I turn to MAMP for the initial setup, and would like to ask any advice or known issues with SMF and MAMP.

unless you know what you are doing, setting up a forum locally and then trying to transfer and update everything for the webserver is sure to lead to more problems than it solves...
However -- assuming your MAMP install includes a webserver with php and mySQL, it should work
