How are cookies generated by SMF? I didn't find anything related to 'SMFCookie814' in source code.

The cookie name is set in Settings.php. It's different for every install of SMF.

The actual mechanics of what goes into a cookie for SMF is pretty complicated, what are you hoping to do with it?

That's a long, complex topic and given that it has security implications, you can appreciate I have some reluctance to explain how it works without understanding why it matters to you that you understand 'inside how it works'.
