I'm now helping with a site that has been running for quite some time. It is running 2.0.19 currently, but likely has been upgraded in the past.
There is a consistent error that shows up in the Error Log pretty much any time a page is loaded.
8: Undefined index: notify_announcements
It does not seem to be causing problems with pages loading or anything like that, but it is spamming the logs. Any suggestions on what I can do to restore the index?

Well, first thing I'd check is your language files - Are you using other languages than English, and if you are, are all your languages up to date?
2.0.16 added language strings for GDPR related settings, and
$txt['notify_announcements'] = 'Allow the administrators to send me important news by email';
was among them.
You should find this string in your ./Themes/default/languages/index.(language).php files.
