What if I want to use just the red version of this theme? How would I go about making that color the default and not being able to select the other colors?

you can select just a single colour in the admin panel

Make it the default and go to admin-----current theme

Weird

When I select the Red version, it default back to the original SMF forum theme. And I did make Helois the default theme before I did that...

You probably use the wrong version of Helios. The 1.0.6 version is named Helios_multi.zip, while the others have "11rcx" attached to the end of the name. Be sure to get the right one.

Or simply upload and just overwrite the Helios theme you have now with the Helios_multi.zip. They are the same, apart from some SMF specific codes...

I've installed the helios_multi11rc2 and have it customized the way I want it for my site but have not been able to see where I can delete the "SMF Just Installed"  and customize that section for my site's forum.  Any advice would be greatly appreciated.

I found it, it was under the news/newsletter section in the admin section
