I would like a detailed but easy to understand instructions on how to add a shoutbox/chat onto my SMF forums.

Or how to add a chatango thing on it.

also, how can you add custom bbcodes?

Did you take a look at the mod section yet? A quick search brought up these results. See which one you like and install it to your forum.

You will need to edit the /Sources/Subs.php file to add your own BB codes.
