Is there any simple way to copy and/or extract all forum posts into a file/folder?

I'm not even sure exactly where the posts are stored. Is it in the mySQL database?

Yes, it's in the database. Messages live in a table called smf_messages (prefix varies).

No, there isn't a simple way to export them.

not sure if this is what you are after but off the top of my head the gdpr helper mod is supposed to allow for members to export their data including profile and posts....
i've not used it so donno....
or if you're just looking for a backup for your site then yeah as arantor said....

Yes, I'm just looking for a way to export some messages, to save the time from having to go into each one and copy/paste.

I'm spending more time on site support than I am on content creation, and so I'm going to be looking into other alternatives.
