A few users that have tried to register are stating that the email field is a bright yellow and are unable to see what they are typing in and the other text fields are jet black, but are at least able to see what they type.

Is this possibly a known issue, or would it be a theme issue?

Sounds like it's caused by google toolbars autofill feature.
