Changing text in top banner of Saf Multicolour forum

I've uploaded the new Saf Multicolour Orange theme to my site: <http://www.mediaedu.co.uk/SMFRC2 [nofollow]> and it looks fab (in my opinion at least). I'd really like to change the 'My Community' text on the left hand side of the site logo to something like 'mediaedu.co.uk' and make this a hyperlink back to the main website. Any ideas on how this could be done?
