Yeah you know exactly which version you are using and whats the newest etc....

The codenames would just be for development. The real name would be 1.0 or 1.1 and so on.

I was wondering if an upgrade form 1.1RC2 to 1.1 could be done with the package manager or not ?

Inbetween Release Candidates there won't be package manager updates. There are simply too many changes.

When it comes time for me to upgrade my site from 1.1RC2 to the 1.1 final product will there be a code change list that I could use or will the only option be over writing the files with the new ones ?

I only ask because of the custom changes I have made to my site.

No, but you can do a compare yourself by using a compare progam. But it's probably much easier to document the things you've changed to 1.1 RC2 and apply those changes again to the next version.
