I use core, simply because it's always included when any mods need to change the theme. I prefer the Classic.
I would recommend including a high contrast theme in the package for those using lower res monitors. It would help newbies who aren't quite ready to start installing or modding themes.
Since my forum is firearms related, a nice firearms theme would be nice (hint, hint, forum designers  :) ).

I really like this theme.  Very functional and Crip is the best at helping out with advice and help.

I use core for one forum.
For my star trek forum I use "Enterprise".
