How do I make it so useres are unable to choose certain styles.

If you are referring to selecting themes.  In your Admin Control Panel>Under Forum Configuration>Theme Administration

Uncheck the box to allow members to select themes.

Themes.  Sorry, I'm used to dealing with IBP.
I won't my members to be able to choose themes they won't to use but I don't won't them to be able to choose one certain theme. How or can I do that?

Currently, this is not possible without some modification.  It may be possible in 1.1.
