Can someone please inform me if it is possible to create a mod where if I was to edit a user's post it would copy the original post to a moderator only area, so that myself and other moderators can refer back to the original post even though it had been edited

Not a bad feature. Perhaps we can append the original content into the moderate history.

Anyway, currently I sometimes hide the original content (by special tag or by setting it same colour as background) in the original post (for example at the tail or replace empty lines). If you do this then it would be recoverable.

Nice idea :)
Store the previous versions of the post and show them only to admins.
