I'm considering updating my forum from 1.1.11 to RC 3 but I want to know if it is stable enough before I do.
What are your thoughts?

Its stable. It really depends on how customized your forum is. If it is heavily I would wait until SMF 2.0 final

I say it's stable enough to use on a live site.

I used it on my live site and it seems stable. Everything seems to be working perfectly. I 've been using it for a couple of months on 2 live sites.

I havde used 2.0 since the days of 1.1.8

It is defvinately stable in my eyes.

It's stable as well as feature packed, you have almost nothing to lose.

I voted for somewhat... :o

Why? There are bugs in 2.0 RC3 it's not a finshed version of how SMF defines it..The WYSIWYG is the most noticeable (I think) which will be fixed when the final version is released along with other unnoticeable bugs. (that have not impacted my site)

But for the most part it is pretty stable like the above posters have stated.. I have been running it also on a live site as well and have not seen any Major issues with 2.0RC3

I really like(for it being an RC), SMF has done a great job  ;) and I can't wait for the final version.
