How can a special user rank be made for an administrator or moderator. As the owner of the forum, I don't really want my user rank to be 'Newbie', or Junior Member. Basically, how can a rank be made  that can only be given to you by an admin?

Interesting question.  Doesn't appear to be any admin option to do that.  I usually eliminate the rankings altogether by deleting the post based groups.  You can do a simple edit in Display.template.php to set a custom rank, but there really should be an option for it somewhere.

Yes, that does work.  Odd, I had tried that, possibly in 1x, couldn't get it to do what I wanted.

You can then add a custom rank for admins and mods using Personal Text in Profile, but you'd have to mod Display.template.php to put it where the rank is usually displayed.
