I recall reading many posts of a similar topic.

What is the consensus on the best way to keep these unwanted posters off my site?

I know there is a master list of known bad ip's.  But I think I read that it does little good.

Is there a way to bar all ip's from a given country?

We require admin approval of each member at this point, and require a few initial anti robot spam questions at signup to make sure it's a human, but we still get tons of new spammer members each day, who want to post links to porn sites, Canadian drugs, and Viagra links of course.

I use this:
http://custom.simplemachines.org/mods/index.php?mod=1519

I get quite a few entries in my error log showing registration has been blocked to known spammers due to this mod.

I fully recommend joining Project Honeypot and using the httpBL -mod :)
It works wonders, and is probably less prone to false positives than Stop Forum Spam.

Can anyone give me a brief rundown on how Honeypot works?

Aleksi "Lex" Kilpinen

It's gives you a simple script you upload to your server, called a honepot, that basically scams spammers and harvesters to reveal themselves, after which honeypot marks them down to their database. The HttpBL mod needs an API key for Honeypot, which you can get if you have an active honeypot on your own server. Then the mod both lures spammers to your own honeypot, and blocks access to your forum for already known spammers.
