How can I remove the wording 'Unread Post' from category and make category unclickeable e.g Unread Posts Getting Started with SMF

If you actually have a text saying "Unread Posts" in front of a category name, then I'd say you are missing some images of your theme.
Look at the index on this forum, there are images in front the category names to indicate if there are new posts or not - if those images are missing, you will see an alternative text to say the same.
