Navigation Bar UTF-8 Issues (New Install)

Here is my fix: (this involves the whitebox theme and utf-8)

On my website if you look at the navigation bar aka (My domain name � Classes � AE)
I get nice Triangles with a ? in the.  If I change the encoding my browser uses from UTF-8 to ISO-8859-1, the symbols display correctly as "»" ex: 
(My Domain Name » Classes » AE)

This is a brand new install, if getting the "»" symbol is too much, do you know how I can replace it with the greater than sign ">" (or some other comparable symbol).

Thanks.  I am also running the whitebox_20g theme.
