Problems with accents

My provider updated my databases to MySQL8.
I have now some problems with SMF.

All words have lost their accent (I use Italian language).

For example:
- "ciò" became "ciò"
- "à" became "Ã"
- and so on

How can I solve it?

More info:
- I use SMF 2.0.15
- I tried to go to Maintenance--> Database--> Convert in UTF8, but situation got worst--> now even the words in the admin section lost their accent.
- I found this thread too (https://www.simplemachines.org/community/index.php?topic=549772.0), but I couldn't find a solution

Have you tried updating to 2.0.18 via the Package Manager? I'm wondering if that would help, not to mention plugging a boatload of security issues.

Also make sure that you have the "Italian UTF-8" language pack installed, not just the plain "Italian" language pack.

If you are on the proper language pack & still see odd characters... 

The first questions are:
 - What is the collation of all your tables? 
 - What is the value of $db_character_set in Settings.php?
 - What is the value of the global_character_set entry in the settings table?
 - Do you know if your host altered the DB in any fashion?  Restore, changing collations, etc?
Address the process rather than the outcome.  Then, the outcome becomes more likely.   - Fripp
