Did you upgrade from the 2.0.x version and by themes don't want to install do you mean that you can't use them on the new version anymore? If the answer is yes to both questions,, the 2.0.x themes are not compatible with Smf 2.1.x. They will need to be upgraded too.

Or did you mean something different. In that case please provide as many details as possible as to what the issue is.
