Remove theme

I've been playing about with themes and now have a couple I want rid of. I've deleted the directories but they still show in the Theme and Layout page. How do I remove them?
And what is the correct method of creating a them regarding the directory? Do we have to copy the sub folders from the default theme to the new theme main folder?

There is a "remove theme" option in the admin menu.

Would still like to know the correct way of setting up folders for themes etc. if anyone will be so kind.

Just look at the default theme. You probably want the exact same images structure, but you don't need any of the templates or language files unless you change them.
