To be honest, I don't know.

I can't remember choosing a language, it just automatically installed in English, not sure what version, and I have tried to find an option of languages in the menus to see what I am using but can't find any reference to the language being used.

If you let me know where to look then I will be able to get back to you with it.

Also, not that this is important in the scale of things but I only won't my site in English only so I don't need all the extra languages permanently, not sure if that makes a difference.

It'll be in your profile what language you personally are actually using.

For preferred Language it says English.  If I click on the slider to expand the choice, I have besides the other languages, three English choices, English, English (this is the one I am using) and English British.

Try switching to the other English setting, that isn't English British.

Fantastic, you have solved it. 

Will this setting be the default for others on the site ?

If you edit it in Profile, no it isn't. But you can go to Admin > Languages > Edit Language, and tick the radio button for English (ISO-8859-1) which will make it the default.
