  (1.  How  to be arranged in topic? What is the coding I must to change?
Now when have the some one to reply the old topic, after that the old topic will moving to the top list. but I don't want. 

I like the top list  is showing only new topic.


  (2. Within some private profile, I don't want  everyone can see (ICQ, etc.), only owner.

What is the coding I must to change?

For you only: Profile -> Layout Preferences -> Show most recent posts at the top.
For all your members: Admin -> Current Theme Settings -> Reset member specific options for all members -> Show most recent posts at the top

i think he wants to show topicss on index arranged by the date when the topic was STARTED, not by the latest reply to that topic  .................or i understood wrong

Board Default Sort

You can remove ICQ, etc. from the templates - Profile, InstantMessage, and Display.  That said, why not just not enter them, in that case?
