I have been reading about SEO and was wondering if I really need a sitemap for my two forums. If so, how do you add one?

Yes, a sitemap is a must have.  Use the sitemap mod on the mod site.

Update:

Just submitted sitemaps to google search control panel. They were accepted and now I'm seeing 3-4 spiders visiting at the same time.

Yup sitemaps really do help. Don't forget bing as well.

Just got verified by Bing. Are there any other search engines to do? Does anyone even use Yahoo anymore?
