I would be nice to have this!  Must require to fill out your birthday and a few other things when registering. Thoughts?

Which version of SMF, and a few more details would be useful.

That said... check out Custom Profile Fields for SMF 1.x, and the advanced profile fields in SMF 2 (built in)

1.1.10 and adavcned profile fileds in smf wouldn't work with 1.1.10 would it?

The advanced profile fields part wouldn't, but Custom Profile Fields (the mod) should work just fine.

Many of them will work without modification. Some require a little coaxing.

If in doubt, try it (with having a full backup first) and generally someone around here can guide you on any changes that would need to be made - it's often documented in the thread for a given mod.

Most of the MODs in the 1.1 line should work fine.  Even some of the 1.1 RC MODs still work.

It's all down to exactly what they change. Some of the code doesn't change from early 1.1 RCs through to 2.0 RC1.2 (for example, my Page Dropdown mod doesn't require any changes between 1.1 and 2.0)

As a general rule the higher the version it supports, the more likely it is to work. There are tools to help as well, if the package says it won't install, you can often use the Version Emulate Dropdown mod to coax it to work.
