Question regarding themes

When I create a new theme and edit the theme_info.xml, after I install the theme it always says

On the theme selection page in the profile. Is there another file I need to edit in order to change the text is displayed there?

I assume you "created a new theme" by copying files.  If you look at languages/Settings.LANGUAGE.php, the information is in there.
