SMF Version: SMF 1.1.1
I have tried the manual, but cannot figure this out...is there a way to customize user profiles to provide more information?  Is there any way to ask for information that will not be displayed to anyone but me?

The Custom Profile Field Mod is probably what you're looking for :)
